Small-Batch Brownies Recipe

Ingredients

  • 85 grams salted butter, melted
  • 85 grams dark chocolate morsels
  • 2 large eggs, room temperature
  • 150 grams granulated sugar
  • 1 tsp vanilla extract
  • 60 grams all-purpose flour, spooned and leveled
  • 10 grams dutch-processed cocoa powder, spooned and leveled

Method

  1. Preheat the oven to 325F/163C convection. Use cooking spray and parchment paper to grease and line a 9x5-inch loaf pan.
  2. In a heat safe bowl or a saucepan, melt the butter with the dark chocolate. Set them aside to cool while you get the rest of your ingredients together.

  3. Use a whisk to combine the eggs, granulated sugar, and vanilla until they're just barely combined; don't over-mix.
    2 large eggs room temperature, 150 grams granulated sugar, 1 tsp vanilla extract
  4. Pour in the butter and chocolate mixture to the eggs and sugar, while whisking.
  5. Add the flour and cocoa powder to the wet ingredients. Fold them together until they're just barely combined.

  6. Pour the brownie batter into the prepared pan and bake for about 20-25 minutes.
  7. Remove the brownies from the oven and allow them to cool in the pan for about 30 minutes, until they can be sliced without falling apart.

Notes

*you can also use unsweetened natural cocoa powder but you'll get a slightly lighter color and less intense chocolate flavor.
