Ingredients
- 240 grams oatmeal
- 60 grams shredded coconut
- 60 grams all-purpose flour, spooned and leveled
- 150 grams light brown sugar, lightly packed
- 1/2 tsp salt
- 225 grams raisins
- 1 tsp cinnamon
- 1 tsp vanilla
- 113 grams butter, melted
- 84 grams honey
- 120 grams SunButter, creamy
Method
- Preheat the oven to 300F (149C). Stir together the oatmeal, coconut, flour, brown sugar, salt, raisins and cinnamon.240 grams oatmeal, 60 grams shredded coconut, 60 grams all-purpose flour spooned and leveled, 150 grams light brown sugar lightly packed, 1/2 tsp salt, 225 grams raisins, 1 tsp cinnamon
- In a separate bowl, whisk together the vanilla, melted butter, honey and SunButter.1 tsp vanilla, 113 grams butter melted, 84 grams honey, 120 grams SunButter creamy
- Mix the dry mixture with the wet mixture and spread onto a lined half sheet pan.
- Bake for 30 minutes. Remove from the oven and allow it to cool to room temperature, then cover and refrigerate it until solid.
- Slice the bars to desired size. Store in an airtight container in the refrigerator.
