Ingredients
Pancakes
- 1 large egg, room temperature
- 1/2 cup light brown sugar, lightly packed
- 1/2 cup (4oz) milk
- 2 Tbsp canola oil
- 2 Tbsp Sunbutter
- 1 tsp vanilla
- 1 cup all-purpose flour, spooned and leveled
- 1/8 cup Dutch-process cocoa powder, spooned and leveled
- 1 tsp baking powder
- pinch of salt
- 1/4 cup mini chocolate chips
- olive oil for cooking
Cream Cheese Glaze
- 1 cup powdered sugar, spooned and leveled
- 2 oz cream cheese
- 3 Tbsp milk
- 1/2 tsp vanilla
Method
Pancakes
- Combine the egg, brown sugar, milk, oil, Sunbutter, and vanilla in a bowl and whisk until it is smooth.1 large egg room temperature, 1/2 cup light brown sugar lightly packed, 1/2 cup (4oz) milk, 2 Tbsp canola oil, 2 Tbsp Sunbutter, 1 tsp vanilla
- Add in the flour, cocoa powder, baking powder and salt and mix just until combined-don't over mix.1 cup all-purpose flour spooned and leveled, 1/8 cup Dutch-process cocoa powder spooned and leveled, 1 tsp baking powder, pinch of salt
- Let the batter sit for 5-10 minutes, then fold in the chocolate chips.1/4 cup mini chocolate chips
- Keep the stove top on low-medium heat and use olive oil to grease the pan before every pancake.olive oil for cooking
- Use about a 1/4 cup of batter for each pancake and cook for 2 minutes on each side.
Glaze
- Combine all the ingredients and whisk until smooth.1 cup powdered sugar spooned and leveled, 2 oz cream cheese, 3 Tbsp milk, 1/2 tsp vanilla
- Serve the pancakes hot, topped with icing and extra chocolate chips.
