Coffee Cupcakes

Coffee cupcakes are the best vanilla cupcake soaked in sweetened coffee and frosted with a silky espresso French buttercream.

egg yolks granulated sugar water unsalted butter espresso powder vanilla bean paste cocoa powder


STEP 1: Mix the sugar with hot coffee. Once coffee is cooled, add the vanilla bean paste.

STEP 2: Whisk cake flour, baking soda, baking powder, salt & sugar. Beat in the butter & oil. Mix in egg whites & vanilla extract, then add milk & sour cream.

STEP 3: Fill cupcake liners 3/4 full and bake at 350F for 16 minutes. Remove from the oven and allow them to cool.

STEP 4: Make one batch of French buttercream (swipe up for recipe). Once the buttercream is done, mix in the dissolved coffee & vanilla.

STEP 5: Poke a bunch of holes in the top half of the cupcakes. Drizzle the coffee over each cupcake, slowly, giving it time to soak into the cake.

STEP 6: Pipe the coffee buttercream on the cupcake & top with a dusting of cocoa powder.
