Using Pampered Chef's Ice Cream Maker, freeze the bowl for 24 hours before starting the ice cream.
Once the bowl has been frozen for 24 hours, combine all the ingredients in a separate bowl and whisk until the sugar is dissolved.
1 1/2 cup (360mL)whole milk, 1 1/2 cup (360mL)heavy cream, 1/2 cup (100g) granulated sugar, 1/2 Tbsp vanilla bean paste, 1/2 tsp salt
Remove the bowl from the freezer, attach the spinner to the lid and turn on the machine. Set it to 20 minutes and once it begins spinning, pour in the milk mixture through the hole on the lid.
Allow it to churn until it becomes the consistency of soft serve ice cream. Turn the machine off, cap the bowl with the lid and freeze for a few hours or overnight.
Martini
If you are making simple syrup for the martinis, make it beforehand so it has time to cool. Dissolve 1/2 cup of sugar in 1/2 cup of water and allow it to cool completely before using (store in an airtight jar in the fridge).
1/2 oz (15mL) simple syrup
To make the martini, place a cup of ice in the cocktail shaker. If you are using fresh watermelon, puree the watermelon and strain out the pulp. Pour it on top of the ice and squeeze the lemon juice into the cocktail shaker.
1 cup (240g) ice, 1 oz (30mL) watermelon juice, 2 oz (60mL) lemon juice
Add the simple syrup, vodka and seltzer water to the cocktail shaker and shake well until it becomes chilled.
2 oz (60mL) vodka, 1 oz (30mL) spiked sparkly seltzer
Assemble
Place 2-3 scoops of vanilla bean ice cream in a cup. Use the cocktail strainer to pour out the martini over the ice cream, straining out the ice, etc.
Garnish with lemon wedges and watermelon chunks. ENJOY!
