Romanian Chicken Stew Recipe (Tocanita de Pui)

Tocanita is a cozy Romanian chicken stew made with tender chicken, sweet paprika, and a rich, savory sauce. It’s simple, comforting, and perfect served over mashed potatoes, pasta, or with fresh bread.

Ingredients

  • 1-2 tbsp olive oil
  • 1 small yellow onion
  • 1 red bell pepper
  • 1-2 cloves garlic , 1 tsp minced
  • 1/2 Tbsp all-purpose flour
  • 1/2 Tbsp paprika, sweet NOT smoked
  • 1/2 tsp fine sea salt
  • 1/2 tsp vegeta, sub for salt if you don't have
  • 1/8 tsp black pepper
  • 1 lb chicken breast, cubed
  • 1-1/2 cups chicken broth , or bone broth or water

Method

  1. Dice all your veggies and chicken. If you want smaller veggies, pulse them in a food processor just until they’re small like a chunky salsa, not completely pureed. The chicken should be about the size of chicken at Chipotle.

  2. Add the oil to a pot over medium-high heat. Saute the onions and peppers for a couple of minutes and then add in the garlic. Stir and reduce the heat to medium.

  3. Add in the flour and seasonings and stir until they’re completely combined.

  4. Add the meat and mix it into the seasonings a bit, immediately followed by the broth. The liquid should come just about up the surface of the chicken. 
    1 lb chicken breast cubed, 1-1/2 cups chicken broth or bone broth or water
  5. Bring to a light boil over medium-high heat, stirring frequently. Then reduce the heat to a low simmer, place the lid halfway on top of the pot and allow to simmer for about 2 hours, stirring every 20-30 minutes. 
  6. Around 2 hours, your chicken should be tender and the broth should've reduced to a thin sauce that holds a streak for a few seconds. Feel free to adjust the consistency by add a little more chicken broth or reducing it longer.
  7. Serve over mashed potatoes, pasta, rice or with bread.
