Pumpkin Donuts

Moist and fluffy pumpkin donuts baked in a donut pan and smothered in cinnamon sugar. The perfect, quick and easy fall treat!

Donut

  • 300 grams all-purpose flour, spooned and leveled
  • 1 Tbsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1 tsp fine sea salt
  • 120 mL canola oil, or any neutral oil
  • 150 grams granulated sugar
  • 100 grams light brown sugar, lightly packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 240 grams pumpkin puree

Cinnamon Sugar

  • 113 grams salted butter, melted
  • 300 grams granulated sugar
  • 100 grams light brown sugar, lightly packed
  • 1 Tbsp ground cinnamon

Method

Donuts

  1. Preheat the oven to 350F (177C) convection and grease a donut pan with baking spray. If you only have one donut pan with 6 molds, you bake one batch at a time.
  2. Place the oil, sugars and eggs in a large bowl and whisk aggressively for 1-2 minutes until it's lightened in color.
    120 mL canola oil or any neutral oil, 150 grams granulated sugar, 100 grams light brown sugar lightly packed, 2 large eggs
  3. Add the pumpkin and vanilla and whisk just until it's well combined.
    240 grams pumpkin puree, 1 tsp vanilla extract
  4. Add the flour, baking powder, salt and spices and fold just until there's no more streaks of flour.
    300 grams all-purpose flour spooned and leveled, 1 Tbsp baking powder, 2 tsp cinnamon, 1 tsp nutmeg, 1 tsp ginger, 1/2 tsp cloves, 1/2 tsp allspice, 1 tsp fine sea salt
  5. Use a piping bag to pipe the batter into the donut molds and bake for 10 minutes. Cool for a minute and then flip over onto the a wire rack or a pan.

Cinnamon Sugar

  1. In a small bowl, mix the sugar with the cinnamon until they're well combined.
    300 grams granulated sugar, 100 grams light brown sugar lightly packed, 1 Tbsp ground cinnamon
  2. Melt the butter in a bowl and dip one donut at a time in the butter then toss around in the sugar.
    113 grams salted butter melted
  3. Repeat with the rest of the donuts and serve fresh or store in an airtight container at room temperature for a couple of days.
