Frosted Black Cocoa Cookie Bar Recipe

Serves 16 bars
When you want cookies but in an easy, no-chill, bake it all together in a pan, kind of way. These black cocoa cookie bars are exactly what they sound like, a black cocoa cookie baked as a bar. I love making these because you just put all the dough in a pan and bake it all at once, frost them if desired and then slice them and enjoy! You get more of that “center cookie” texture with cookie bars!

Cookie Bars

  • 113 grams salted butter, melted
  • 200 grams granulated sugar
  • 2 large egg
  • 2 tsp vanilla extract
  • 40 grams black cocoa powder
  • 180 grams all-purpose flour, spooned and leveled
  • 1/4 tsp fine sea salt
  • 1 1/2 Tbsp baking powder
  • 170 grams chocolate chips, I did Trader Joe's Dark and Mini Semi-Sweet

Frosting

  • 28 grams salted butter
  • 50 grams chocolate chips , I like dark
  • 30 mL milk
  • 180 grams powdered sugar , spooned and leveled
  • 2 tsp vanilla extract
  • tiny pinch fine sea salt

Method

Cookie Bars

  1. Preheat the oven to 350F (177C) and grease and line an 8x8" square baking pan with baking spray and parchment paper. Leave and overhang of the parchment paper so you can easily remove the finished bars (use metal binder clips to clip the parchment to the pan on the edge).
  2. Place the melted butter and the sugar into a medium-large bowl with the butter and whisk until they're completely combined.

  3. Then add the eggs and vanilla and whisk together aggressively for 2-3 minutes, until it's smooth and has lightened in color.

  4. Add the cocoa powder and whisk aggressively until it's well combined.
    40 grams black cocoa powder
  5. Add the flour, salt and baking powder and fold the cookie dough just until there are only a couple more streaks left of flour.
    180 grams all-purpose flour spooned and leveled, 1/4 tsp fine sea salt, 1 1/2 Tbsp baking powder
  6. Fold in the chocolate chips until they're evenly distributed and spread into the prepared pan and bake for 25(ish) minutes. The edges should be set, the center should no longer look wet and be a little puffed. When you tap it on the counter, the center should collapse a little but not feel runny underneath when you press on the center.

  7. Allow the cookie bars to cool before frosting.

Chocolate Frosting

  1. Place the butter in a small saucepan (or bowl and microwave) and heat until it's melted.
    28 grams salted butter
  2. Add the chocolate chips and stir over low heat until the chocolate chips are melted.
    50 grams chocolate chips I like dark
  3. Add the milk, vanilla and powdered sugar and whisk until the frosting is completely smooth.
    30 mL milk, 180 grams powdered sugar spooned and leveled, 2 tsp vanilla extract
  4. Spread on top of cookie bars, top with flakey sea salt and allow to set for a few minutes before slicing.
