Ingredients
Banana Bread
- 400 grams large ripe bananas mashed (3 large bananas or 4 medium)
- 200 grams granulated sugar
- 118 mL vegetable oil
- 3 large eggs room temperature
- 56 grams greek yogurt (or sour cream)
- 1 tsp vanilla extract
- 270 grams all-purpose flour spooned and leveled
- 1 Tbsp baking powder
- 1/2 tsp fine sea salt
- 113 grams mini semi-sweet chocolate chips
- 113 grams finely chopped or roughly ground walnuts
- 12-25 grams granulated sugar
Method
- Preheat the oven to 350F/177C convection*. Grease and line a 9”x5” loaf pan with baking spray and parchment paper.
- In a medium bowl, mash the bananas until it looks like puree and there are no more large chunks.400 grams large ripe bananas mashed (3 large bananas or 4 medium)
- In a large bowl whisk together the sugar and oil until they're combined.200 grams granulated sugar, 118 mL vegetable oil
- Add the eggs, one at a time, whisking until each one is fully incorporated.3 large eggs room temperature
- Then add the greek yogurt and vanilla, whisking for 2 minutes, until they are completely smooth.56 grams greek yogurt (or sour cream), 1 tsp vanilla extract
- Add in the mashed bananas and whisk until it’s combined.
- Fold in the flour, baking powder and salt just until the last streak of flour is combined.270 grams all-purpose flour spooned and leveled, 1 Tbsp baking powder, 1/2 tsp fine sea salt
- Fold in half of the walnuts and a 3/4 of the chocolate chips.113 grams mini semi-sweet chocolate chips, 113 grams finely chopped or roughly ground walnuts
- Toss the rest of the walnuts with 1-2 Tbsp of sugar.12-25 grams granulated sugar
- Pour half of the batter into the prepared loaf pan and sprinkle some chocolate chips and half of the sugared walnuts on top. Then pour in the rest of the batter and with top the rest of the chocolate chips and sugared walnuts.
- Bake for 60ish minutes, (insert a knife in the center and make sure no raw batter comes out on it). Remove from the oven and let it cool in the pan for 30-60 minutes.
Notes
*I bake most of my things on convection because my oven is too hot on the bottom but if it's browning too quickly on top, sometimes I turn the convection fan off halfway through baking.
