Apple and Blackberry Crumble is an easy and delicious mix of apples and blackberries tossed with brown sugar and topped with a crispy graham cracker streusel and a generous amount of vanilla ice cream!
4-5large applespeeled and sliced (or 7-8 medium apples)
2cups175g/6oz fresh blackberries
2Tbsp lemon juice1 medium or 1/2 a large lemon
3Tbsp(22g) all-purpose flour
1/4cup(50g) light or dark brown sugarlightly packed
1/8tspfine sea salt
1tspvanilla extract
Graham Cracker Streusel
1/2cup(113g) salted buttermelted
1cup (120g) all-purpose flourspooned and leveled
1cup(100g) graham cracker crumbs*can make without, use 1 3/4 cup (210g) flour
1/2cup(100g) brown sugarlight or dark
1/8tspfine sea salt
1tspground cinnamon
Vanilla ice cream for topping
Instructions
Preheat the oven to 350F/177C convection (325F/163C conventional).
For the filling, peel and slice the apples and place them in a deep 10" pan or a casserole dish

Add the lemon, flour, sugar, salt and vanilla and mix until they're combined.
2 Tbsp lemon juice, 3 Tbsp (22g) all-purpose flour, 1/4 cup (50g) light or dark brown sugar, 1/8 tsp fine sea salt, 1 tsp vanilla extract
Add the blackberries use a fork to gently mix them in so they don't get all smushed.
2 cups 175g/6oz fresh blackberries
For the streusel, melt the butter in a separate bowl and then add in all the flour, graham cracker crumbs, brown sugar, salt and cinnamon. Mix everything with a fork until the streusel forms pea sized chunks.
1/2 cup (113g) salted butter, 1 cup (120g) all-purpose flour, 1/2 cup (100g) brown sugar, 1/8 tsp fine sea salt, 1 tsp ground cinnamon, 1 cup (100g) graham cracker crumbs
Spread evenly on top of the apple mixture and bake for about 45 minutes, until the streusel has browned.
Remove from the oven, let it rest for about 30 minutes or longer and then serve with vanilla ice cream!

Notes
*if you serve when it's warm, it will still be quite juicy and runny but as it cools, it sets up nicely.
