Apple and Blackberry Crumble Recipe

Apple and Blackberry Crumble is an easy and delicious mix of apples and blackberries tossed with brown sugar and topped with a crispy graham cracker streusel and a generous amount of vanilla ice cream!

Ingredients

Apple Blackberry Filling

  • 4-5 large apples, peeled and sliced (or 7-8 medium apples)
  • 175 grams (2 cups) fresh blackberries
  • 30 mL lemon juice, 1 medium or 1/2 a large lemon
  • 22 grams (3 Tbsp) all-purpose flour
  • 50 grams light or dark brown sugar, lightly packed
  • 1/8 tsp fine sea salt
  • 1 tsp vanilla extract

Graham Cracker Streusel

  • 113 grams salted butter, melted
  • 120 grams all-purpose flour, spooned and leveled
  • 100 grams (1 cup) graham cracker crumbs, *can make without, use 1 3/4 cup (210g) flour
  • 100 grams brown sugar, light or dark
  • 1/8 tsp fine sea salt
  • 1 tsp ground cinnamon
  • Vanilla ice cream for topping

Method

  1. Preheat the oven to 350F/177C convection.
  2. For the filling, peel and slice the apples and place them in a deep 10" pan or a casserole dish
    4-5 large apples peeled and sliced (or 7-8 medium apples)
  3. Add the lemon, flour, sugar, salt and vanilla and mix until they're combined.
    30 mL lemon juice 1 medium or 1/2 a large lemon, 22 grams (3 Tbsp) all-purpose flour, 50 grams light or dark brown sugar lightly packed, 1/8 tsp fine sea salt, 1 tsp vanilla extract
  4. Add the blackberries use a fork to gently mix them in so they don't get all smushed.
    175 grams (2 cups) fresh blackberries
  5. For the streusel, melt the butter in a separate bowl and then add in all the flour, graham cracker crumbs, brown sugar, salt and cinnamon. Mix everything with a fork until the streusel forms pea sized chunks.
    113 grams salted butter melted, 120 grams all-purpose flour spooned and leveled, 100 grams brown sugar light or dark, 1/8 tsp fine sea salt, 1 tsp ground cinnamon, 100 grams (1 cup) graham cracker crumbs *can make without, use 1 3/4 cup (210g) flour
  6. Spread evenly on top of the apple mixture and bake for about 45 minutes, until the streusel has browned.
  7. Remove from the oven, let it rest for about 30 minutes or longer and then serve with vanilla ice cream!
    Vanilla ice cream for topping

Notes

*if you serve when it's warm, it will still be quite juicy and runny but as it cools, it sets up nicely.
