White Forest

White forest cake is my vanilla take on the traditional black forest cake. A super fluffy vanilla cake topped with fresh whip cream and homemade cherry topping.

AP flour baking soda salt unsalted butter granulated sugar vegetable oil sour cream vanilla extract whole milk

black cherries granulated sugar cornstarch kirsch

powdered sugar cream of tartar heavy cream vanilla bean paste

STEP 1: Whisk flour, baking powder & salt. Beat the butter & sugar, add the oil, and beat again. Add the eggs, one at a time, beating after each one.

STEP 2: Add the sour cream & vanilla extract & beat. Add half the dry ingredients, turn mixer to low, pour in milk, & add the rest of the dry ingredients.

STEP 3: Distribute the batter into two 8-inch pans & bake on 350F for 35 minutes.

STEP 4: Combine the cherries, sugar & cornstarch over low-medium heat & bring it to a simmer. Allow to simmer for 5 min.

STEP 5: Remove from heat, add the kirsch & pour it into a bowl to cool completely.

STEP 6: Whisk together powdered sugar & cream of tartar. Add a few tablespoons of cream & vanilla & whisk. Add the rest of the cream & beat.

STEP 7: Top 1st layer with half the whipped cream. Spread filling on top & place 2nd layer on top. Spread the rest of the whipped cream on top & top with fresh cherries
