Super fluffy and creamy Swiss merinuge buttercream recipe!

egg whites granulated sugar unsalted butter vanilla bean paste salt


STEP 1: Whisk egg whites & granulated sugar over a double boiler for 5-10 minutes until the granulated sugar is completely dissolved.

STEP 2: Remove the bowl of egg whites from the heat & beat the egg whites with the sugar for 7-10 minutes on high speed and then lower the speed to low-medium.

STEP 3: Slowly add 2 Tbsp of butter at a time. Once all the butter is added, turn the mixer up to high speed for a few seconds, until it comes together.

STEP 4: Use a rubber spatula to scrape the edge of the bowl. Add the vanilla bean paste (or extract) and salt and beat until it's fully combined. Enjoy!
