STEP 1:
For the cake, whisk together flour, granulated sugar, baking powder, salt, and lemon zest, until they're evenly distributed.

Add butter and use an electric mixer with whisk attachment to beat the mixture for 2-3 minutes, until pea size chunks form.

Add oil and beat for another minute. Add eggs, one at a time, beating on medium speed until each egg is fully incorporated.
