STEP 1:
For the creme diplomate, whisk the egg yolks, sugar, cornstarch and salt aggressively until smooth. In a saucepan, bring milk to a simmer.

Temper the eggs by streaming half of the milk into the egg mixture while whisking. Dump back into a saucepan and cook while whisking.

Once the mixture thickens and starts to stick to the pan, whisk another minute. Pour it into a bowl with vanilla and butter.
