STEP 1: For the brioche dough, combine flour, instant yeast, and sugar in a mixer. Add in egg, egg yolk, milk and vanilla and mix with hook attachment.

STEP 2: Add in salted butter 1 tbsp at a time. Mix until dough starts to come together. Let it knead until the dough feels smooth and elastic.

STEP 3: Place dough on a floured surface to rest for 10 min. Roll out the dough with a rolling pin into a 12x16 inch rectangle and grease a muffin tin.

STEP 4: For the filling, spread the salted butter onto the dough leaving a 1/2 inch border. In a small bowl mix the sugar, cocoa powder and cinnamon.

STEP 5: Sprinkle the mixture over the butter and chocolate chunks on top. Starting on the long side, roll up the dough into a tight log.

STEP 6: Evenly slice the log into 12 rolls and place into the muffin tin and cover. Leave them in a warm environment for 45 min to rise.

STEP 7: Bake the rolls for 25 min at 350F until they are golden brown. Remove and allow them to cool for a few minutes.

STEP 8: For the glaze, mix cocoa powder, powdered sugar and heavy whipping cream and spread over the warm rolls. Serve immediately.
