BUTTER PECAN  ICE CREAM SANDWICHES

Butter pecan ice cream sandwiches are chewy brown butter cookies studded with brown sugar butter pecans, cinnamon and sandwiched around butter pecan ice cream.

Ingredients

BROWNED BUTTER

CANDIED PECANS

ICE CREAM

heavy cream sweetened condensed milk vanilla bean paste browned browned candied pecans

COOKIES

AP flour baking powder cinnamon salted butter light brown sugar egg candied pecans

STEP 1: For candied pecans, make browned butter. Add 2 Tbsp of browned butter, brown sugar, and water over heat and stir until sugar dissolves.

STEP 2: Add pecans and cinnamon and stir until pecans are coated. Spread them out onto parchment to cool, then chop into small chunks.

STEP 3: For the ice cream, beat heavy cream until it holds stiff peaks. Add sweetened condensed milk, vanilla, and browned butter and mix.

STEP 4: Fold in chopped pecans and spread ice cream in prepared pan. Freeze for about 4-6 hours.

STEP 5: After it fully freezes, remove and cut 9 rounds of ice cream. Place them back in the freezer and make the cookies.

STEP 6: Whisk 1 cup browned butter and brown sugar for 2 min. Add egg and whisk until pale. Fold in flour, baking powder and cinnamon.

STEP 7: Fold in chopped pecans, then scoop 18 balls into rounds, flatten them slightly on pan and bake at 350F for 11 min.

STEP 8: Remove and slam pan onto the counter. Use a biscuit cutter to scoot cookies around to make them perfectly round.

STEP 9: Let cookies cool completely to room temperature. Place rounds of ice cream between 2 cookies and serve immediately.
