Brioche donuts are made with a super fluffy and pillowy brioche dough and fried to golden perfection!

AP flour instant yeast granulated sugar salt eggs egg yolks salted butter water granulated sugar cinnamon canola oil

Ingredients

STEP 1: Mix flour, yeast, sugar & salt in a stand mixer. Add in eggs & egg yolks followed by butter & water & mix.

STEP 2: Knead the dough until it begins to peel itself away from the sides of the bowl and forms a ball around the hook attachment.

STEP 3: Push the dough to one side of the bowl, grease the open side of the bowl, then repeat with the other side. Cover the bowl with plastic wrap.

STEP 4: Place the bowl in a warm environment & allow it to proof until it’s doubled in size, then punch it down & turn it onto a floured work surface.

STEP 5: Line two baking sheets with 16-20 4x4” parchment paper squares, split dough in half, roll each half into a log, then cut each log into 8-10 chunks.

STEP 6: Roll each chunk into a ball & place them on the prepared baking sheets. Cover with plastic wrap, and allow to proof.

STEP 7: Prepare for frying the donuts by lining two cooling racks with paper towels and spreading the sugar in a bowl.

STEP 8: Ten minutes before donuts are done proofing, heat oil to 360F. Place 2-4 donuts in the oil at a time, being sure to leave space around them.

STEP 9: Fry the donuts on each side for 1 to 2 minutes, or until they are browned. While they’re still warm, toss the donuts in the sugar & serve.
