BLUEBERRY MUFFINS WITH FROZEN BLUEBERRIES

The fluffiest and most tender blueberry muffins with frozen blueberries. They can be made with regular or wild blueberries.

Ingredients

STEP 1: Whisk together flour, baking powder, baking soda and salt. Set aside. In a large bowl, whisk together melted butter and sugar.

STEP 2: Add one egg at a time and whisk for 30 seconds. Add the Greek Yogurt and vanilla extract and mix until smooth.

STEP 3: Add in the heavy whipping cream and whisk until smooth. Add in the dry ingredients. Reserve 1 tbsp of flour for the blueberries.

STEP 4: Toss blueberries with the reserved flour and fold into the batter. Cover and set aside for 1 hr.

STEP 5: Fill a prepared 12 cup muffin tin to the top. Sprinkle with granulated sugar and bake at 425F for 5 min.

STEP 6: Reduce the oven temperature to 375F and bake for 11 min. Remove from the oven and allow the muffins to cool before serving.
