Birthday Cake


Every birthday party needs birthday cake cupcakes, & these are made using my vanilla cupcakes filled with a chocolate ganache and milk chocolate Swiss Meringue Buttercream.

STEP 1: Whisk cake flour, baking powder, salt & sugar. Add butter & oil & beat. Add egg & vanilla extract & mix. Then add milk & sour cream & mix.

STEP 2: Fill cupcake liners about 3/4 full & bake on 350F for 16-18 minutes. Remove & allow to cool before cutting a hole from center.

STEP 3: Heat the cream, then pour it over the chocolate chips. Cover for 2 minutes then stir until combined. Allow it to cool for 30 minutes, mixing every few minutes.

STEP 4: When the cupcakes are at room temperature, fill the hole in the cupcakes to the top.

STEP 5: Bring ½ cup of water to a simmer. Create a double boiler & whisk egg whites & sugar over low heat for 5 minutes.

STEP 6: Remove & beat mixture. Slowly add 2 Tbsp of butter at a time. Add the melted chocolate, vanilla bean paste & salt & beat.

STEP 7: Pipe the frosting onto each cupcake. Top with sprinkles & refrigerate for 15 minutes to set!
