Banana pudding cake has a milk sponge cake that pairs perfectly with the vanilla pastry cream, fresh banana slices, vanilla wafer cookies and fresh whipped cream.

STEP 1: For the pastry cream, whisk the eggs, sugar, cornstarch and salt until smooth. In a saucepan, bring milk to a simmer over medium heat

STEP 2: While whisking, stream half of the milk into the egg mixture. Then dump the whole mixture into the saucepan and cook while whisking.

STEP 3: Continue to whisk aggressively as it thickens. Remove from heat and pour into a bowl with butter and vanilla and whisk until smooth.

STEP 4: For the sponge cake, whisk flour, baking powder and sea salt in a bowl. Gently heat up the milk and butter until the butter is melted.

STEP 5: Set aside the heated milk and butter. Whisk eggs in the bowl of a stand mixer until the eggs begin to froth. Stream in the sugar.

STEP 6: Add vanilla extract and beat until it is fluffy and pale. Sift in the dry ingredients and beat on low while streaming in the milk and butter.

STEP 7: Divide the batter into three 8 inch prepared cake pans and bake for 20 min at 350F until  golden brown

STEP 8: For the whipped cream, sift powdered sugar and salt into the bowl of the stand mixer. Add heavy whipping cream and vanilla and whisk.

STEP 9: As the mixture starts to thicken, turn the mixer up to medium-high and whip just until it holds stiff peaks.

STEP 10: To assemble, toss sliced bananas into a bowl with lemon juice. Once the cake cools, spread a layer of pastry cream on the first cake layer.

STEP 11: Add a single layer of banana slices on top of the pastry cream and followed by a layer of vanilla wafer cookie.

STEP 12: Top with a layer of whipped cream and then another layer of cake. Repeat and then top with the last layer of cake.

STEP 13: Spread the rest of the whipped cream on top and decorate with banana and wafer cookies. Refrigerate for a few hours and serve.
