Tiramisu Cake is 4 layers of vanilla sponge cakes soaked in coffee, frosted with mascarpone cream & topped with cocoa powder.

STEP 1:
For the cake, separate the egg yolks from the whites and beat the egg whites with the sugar until it holds stiff peaks.

Add the egg yolks and vanilla extract and beat at medium-high speed until everything is combined.

Sift in flour, baking powder and salt and beat until the flour is mixed in. Fold the mixture a couple of times.

Distribute the batter evenly among the four prepared pans and bake at 350F for about 18 minutes.

For the coffee soak, dissolve sugar in hot coffee. Once the coffee has cooled, add the amaretto.

Make the mascarpone cream by beating together mascarpone with powdered sugar until it’s smooth.

Add the vanilla bean paste, then stream in heavy whipping cream in 3-4 increments. Don’t overbeat.

Assemble by flipping all the cakes onto their tops and with a fork, poke holes. Spoon ½ cup of coffee mixture over the 1st layer.

Frost with mascarpone cream, without going past the edge. Repeat the layering process with the other layers.

Create some swirls with a spoon on the top layer of mascarpone and then top generously with cocoa powder.
