STEP 1: For the cake, separate the egg yolks from the whites and beat the egg whites with the sugar until it holds stiff peaks.

STEP 2: Add the egg yolks and vanilla extract and beat at medium-high speed until everything is combined.

STEP 3: Sift in flour, baking powder and salt and beat until the flour is mixed in. Fold the mixture a couple of times.

STEP 4: Distribute the batter evenly among the four prepared pans and bake at 350F for about 18 minutes.

STEP 5: For the coffee soak, dissolve sugar in hot coffee. Once the coffee has cooled, add the amaretto.

STEP 6: Make the mascarpone cream by beating together mascarpone with powdered sugar until it’s smooth.

STEP 7: Add the vanilla bean paste, then stream in heavy whipping cream in 3-4 increments. Don’t overbeat.

STEP 8: Assemble by flipping all the cakes onto their tops and with a fork, poke holes. Spoon ½ cup of coffee mixture over the 1st layer.

STEP 9: Frost with mascarpone cream, without going past the edge. Repeat the layering process with the other layers.

STEP 10: Create some swirls with a spoon on the top layer of mascarpone and then top generously with cocoa powder.
