RASPBERRY  WHITE CHOCOLATE MUFFINS

These raspberry white chocolate muffins  have a vanilla base studded with tart raspberries and sweet white chocolate.

Ingredients

AP flour baking powder baking soda salt salted butter granulated sugar eggs Greek Yogurt vanilla extract heavy cream raspberries cornstarch white chocolate chips sugar

STEP 1: Slice raspberries in half and place them face down onto a paper towel to remove liquid and set aside.

STEP 2: Mix flour, baking powder, baking soda and salt. Set aside. Whisk melted butter and sugar in a large bowl.

STEP 3: Add one egg at a time and whisk for 30 seconds. Add the Greek Yogurt and vanilla extract and whisk.

STEP 4: Add heavy whipping cream and whisk until smooth. Add dry ingredients and mix.

STEP 5: Toss raspberries with cornstarch and add it to the batter with the white chocolate chips. Cover it for 1 hour.

STEP 6: Fill a prepared 12 cup muffin tin to the top. Sprinkle with granulated sugar and bake at 425F for 5 min.

STEP 7: Reduce the oven temp to 375F and bake for 13 min. Remove from the oven and cool before serving.
