Rich and creamy pistachio cheesecake baked in a brown butter graham cracker crust.

CRUST

salted butter graham crackers granulated sugar cinnamon

pistachios  water

cream cheese granulated sugar pistachio paste sour cream pure vanilla extract fine sea salt egg

STEP 1: For the crust, bring the butter to a boil. Stir until milk solids brown and settle at the bottom and pour into a bowl to cool.

STEP 2: Grind the graham crackers with a food processor. Add sugar, cinnamon and melted butter and pulse.

STEP 3: Dump the crumbs into a prepared pan. Use a measuring cup to press down evenly, coming up halfway around the edges. Bake for 5 min at 300F.

STEP 4: For the pistachio paste, pulse pistachios in a food processor. Add water and blend until it turns into a paste.

STEP 5: For the filling, mix the cream cheese, pistachio paste and sugar until smooth. Mix in sour cream, vanilla and salt.

STEP 6: Mix in the egg and pour the batter over the crust. Bake on the middle rack with a pan full of water next to it.

STEP 7: Bake for 35 min. Turn off the oven and leave the door slightly open for 10 min. Open the door fully for another 10 min.

STEP 8: Remove the cheesecake from the oven and cool to room temperature. Refrigerate before serving.
