Molly cake is a fluffy and spongy cake made with whipped egg whites and enriched with egg yolks and whipped cream. It's often used as cake layers in European desserts.

STEP 1: Beat egg whites and sugar until it holds stiff peaks. Add egg yolks and vanilla and beat until they’re combined.

STEP 2: Sift the flour, baking powder and salt over the batter and turn the mixer up to medium speed, just until it’s combined.

STEP 3: In another bowl, whip the cream just until it holds stiff peaks. Fold whipped cream into batter until fully combined.

STEP 4: Distribute batter among prepared pans and bake at 350F for 25 min. Remove and allow to cool for 15 min in the pan.

STEP 5: Remove the cakes from the pan and place them onto a cooling rack or on a tea towel and allow them to cool completely.

STEP 6: After they are fully cooled, use a large serrated knife to slice each layer in half if desired, or use as desired.
