MINI EGG COOKIES

Mini egg cookies feature Cadbury mini eggs and dark chocolate pools, with a crisp exterior and soft interior.

Ingredients

salted butter light brown sugar large egg AP flour baking powder fine sea salt unsweetened cocoa powder cornstarch dark chocolate Cadbury eggs

STEP 1: For the mini egg cookies, crush the Cadbury eggs and set aside. Melt the butter in a bowl and whisk in the light brown sugar.

STEP 2: Add the egg and vanilla and whisk. Mix in the flour, baking powder and salt until the last streak is combined.

STEP 3: Split the dough in half. Add cornstarch to one and the cocoa powder to the other. Add chocolate and Cadbury eggs to each batter and refrigerate.

STEP 4: Alternate scooping each dough with a cookie scooper a few times so they're marbled. Place them on a  cookie sheet and refrigerate.

STEP 5: Bake for 12 min at 350F. Tap the baking sheet on the counter and reshape if needed.
