These lemon cookies have a brown butter base with a tangy lemon flavored dough and studded with sweet pools of melted white chocolate.

Ingredients

STEP 1:
Heat the butter over medium heat, stirring until bubbles form and milk solids brown and settle on the bottom. Pour into a bowl and cool.

STEP 2:
Place the sugars and zested lemons in a bowl. Use your fingers to run the zest into the sugar. Add the hot butter and stir to cool the butter.

STEP 3:
Add egg, vanilla and lemon juice and whisk until smooth. Add flour, cornstarch, salt and baking soda and fold the cookie dough.

STEP 4:
Fold in chopped white chocolate and split the dough into 8 cookies. Place onto prepared sheet and bake on the middle rack at 350F for 10 min.

STEP 5:
Remove from oven, tap on the counter and round them out with a round biscuit cutter. Return to oven for 2 minutes and repeat.

Sprinkle with flakey sea salt and allow them to rest for 10 minutes on the pan before transferring off the cookie sheet to eat.
