Genoise sponge cake is a fluffy & spongy cake made with butter & egg yolks. It’s used specifically in European tortes & pastries.

Ingredients

STEP 1:
Beat together the egg whites and the granulated sugar until the meringue is fluffy and holds stiff peaks.

Add the egg yolks, the melted butter and the vanilla extract and beat together at medium speed, until combined.

STEP 3:
Sift the flour and the salt over the batter and turn the mixer up to medium speed, mixing just until it’s combined.

STEP 4:
Pour batter into prepared pans and bake at 350F for 18 minutes, until the cake is golden, and springs back when you press on it.

STEP 5:
Allow them to cool for 15 minutes in the pan, then remove the cakes and place them onto a cooling rack or tea towel.

Allow the cake to cool completely and if desired, use a large serrated knife to slice each layer in halves or three.
