Ferrero Rocher cookies are fudgey dark chocolate cookies with praline hazelnuts and silky chocolate ganache.

Ingredients

HAZELNUT PRALINE

blanched hazelnuts granulated sugar water

cookies

salted butter light brown sugar egg all purpose flour unsweetened cocoa powder baking powder fine sea salt semi-sweet chocolate pralined hazelnuts

GANACHE

semi-sweet chocolate heavy whipping cream

STEP 1: For the hazelnut praline, place the hazelnuts in a bowl. Dissolve sugar in water over med-low heat until honey-colored.

STEP 2: Pour the sugar evenly over the hazelnuts quickly and pulse it in the food processor until there are no large chunks.

STEP 3: For the chocolate cookie, whisk the melted butter, brown sugar and egg until it lightens in color. Fold in flour, cocoa powder, baking powder and salt.

STEP 4: Add the chopped chocolate and praline until evenly distributed. Use a 2 ounce cookie scoop to create 8 smooth round balls.

STEP 5: Place 5 cookies on a prepared pan and bake for 6 minutes at 350F. Then bang the tray on the counter to flatten the cookies.

STEP 6: Use a biscuit cutter to reshape the cookies and bake again for 6 minutes. Bang them on the counter and reshape them.

STEP 7: For the chocolate ganache, heat cream in a pot until simmering. Pour it over the chocolate chips, cover, let it rest, and then mix until smooth.

STEP 8: Allow the ganache to cool for 10 min. Spread it on top of the cooled cookies and top with a sprinkle of praline.
