STEP 1:
Cream the room temperature butter with the granulated sugar until they're pale and fluffy.

Add the eggs and vanilla extract and beat at full speed until they're well combined.

Add in the greek yogurt (can also use regular yogurt or sour cream) and mix until they're smooth.

Fold in the flour, baking powder and salt, just until the last streak of flour is combined.

Spread half the coffee cake batter in the pan, sprinkle with cinnamon sugar and top with the other half of the batter.

Pulse all the ingredients for the streusel in a food processor until it's chunky.

Place streusel on top of batter and bake for 45 minutes. Cool before slicing, serve with dusting of powdered sugar & coffee.
