Coffee Cake



This easy coffee cake recipe is a vanilla butter cake with a cinnamon brown sugar filling & streusel topping. It’s guaranteed to be your coffee’s new best friend.

STEP 1:  Cream the room temperature butter with the granulated sugar until they're pale and fluffy.

STEP 2:  Add the eggs and vanilla extract and beat at full speed until they're well combined.

STEP 3:  Add in the greek yogurt (can also use regular yogurt or sour cream) and mix until they're smooth.

STEP 4:  Fold in the flour, baking powder and salt, just until the last streak of flour is combined.

STEP 5:  Spread half the coffee cake batter in the pan, sprinkle with cinnamon sugar and top with the other half of the batter.

STEP 6:  Pulse all the ingredients for the streusel in a food processor until it's chunky.

STEP 7:  Place streusel on top of batter and bake for 45 minutes. Cool before slicing, serve with dusting of powdered sugar & coffee.
