Dulce de leche cake is made with a tender vanilla sponge cake and frosted with a super easy, cream cheese dulce de leche frosting.

STEP 1: For the vanilla sponge, whisk egg whites and sugar. Beat for a few minutes, just until the meringue is fluffy and holds stiff peaks.

STEP 2: Add egg yolks and vanilla. Beat until combined. Sift flour, baking powder and salt over the batter and  mix at medium speed until combined.

STEP 3: In another bowl use an electric mixer with the whisk attachment. Whip the cream just until it holds stiff peaks. Fold in whipped cream.

STEP 4: Distribute the batter evenly between 2 prepared pans with parchment paper and baking spray.  Bake for 25 minutes at 350F.

STEP 5: Remove from the oven and run a knife around the edge to release from the pan. Cool for 15 min and move onto cooling rack or towel.

STEP 6: For the frosting, beat room temperature cream cheese with dulce de leche in electric mixer  until combined. Add salt and vanilla.

STEP 7: Spread a layer of frosting on the first layer of cooled cake. Top it with the second layer. Use frosting to cover the rest of the cake. Refrigerate.
