Irresistible biscoff cookie butter cookies with crushed biscoff cookies and cookie butter. This is a must try recipe!

COOKIE DOUGH

salted butter cookie butter egg light brown sugar AP flour biscoff cookies baking powder sea salt

STEP 1: Whisk to combine the melted butter with the cookie butter, sugar and egg. Whisk aggressively until it lightens in color.

STEP 2: Add flour, biscoff cookie crumbs, baking powder and salt. Fold until almost combined. Add the chopped cookie and fold until combined.

STEP 3: Scoop into 8 round balls using 2 ounce cookie scooper. Roll until smooth and toss in a bowl of cinnamon sugar.

STEP 4: Bake for 8 min at 350F. Remove and bang onto counter to flatten cookie. Quickly use biscuit cutter to scoot cookies back into a round shape.

STEP 5: Bake for another 6 minutes until set on the edges. Remove and bang onto counter to flatten cookie and round up edges again.

STEP 6: Top with the roughly chopped biscoff cookies and a drizzle of cookie butter. Cool on the pan before serving.
