These chocolate peppermint cookies are nothing short of a dark and rich brownie in cookie form, stuffed with Ghirardelli peppermint chocolate bark.

STEP 1: Microwave butter until it's melted, add light brown sugar & whisk together. Add in egg & vanilla & whisk until smooth.

STEP 2: Add flour, cocoa powder & baking powder & fold cookie dough until there are a few streaks left of flour. Fold in chopped peppermint bark.

STEP 3: Roll cookie dough into 8 small cookies, 4 per sheet, & bake 1 sheet on middle rack at 350F for 10 min on convection or 12 min on conventional.

STEP 4: Remove from oven, give the pan a  tap on the counter & allow them to rest for 5-10 minutes. Sprinkle with sea salt flakes & enjoy!
