Butterscotch CAKE


Chocolate chip butterscotch cake is a vanilla cake with chocolate chips, chocolate ganache frosting & homemade butterscotch sauce!

STEP 1: For the cake, whisk butter, oil, granulated sugar, & light brown sugar. Add vanilla & eggs & beat.

STEP 2: Combine flour, salt & baking powder. Add flour mixture into butter mixture, alternating with buttermilk. Beat until flour is fully incorporated.

STEP 3: Mix 1 Tbsp flour with chocolate chips & fold into batter. Pour batter in four 6-in pans & bake at 350F for 30 min. Remove from pans & let cool.

STEP 4: For butterscotch, melt butter on the stove. Add sugar & heavy cream & mix until everything is fully combined.

STEP 5: Bring mixture to a boil, lower heat to low-medium for 4 min. Remove from heat & stir in vanilla & salt. Cover & allow to cool.

STEP 6: For frosting, heat cream on stove & remove. Pour in chocolate chips, let sit for 1 min, then stir until smooth. Allow to cool.

STEP 7: Beat butter until pale and fluffy. Add sugar & cocoa powder & beat until fully dissolved & fluffy. Mix in chocolate ganache, vanilla, & salt & beat for another few minutes.

STEP 8: Pipe a rim of frosting around the edge of the 1st layer. Spread butterscotch on inside of 'rim'.

STEP 9: Spread a layer of chocolate ganache frosting on top and top with a little extra butterscotch .

STEP 10: Place next layer of cake on top & repeat until all layers are used. Refrigerate for 2 hrs. Use leftover frosting & butterscotch to frost the outside of the cake.
