Biscoff blondies are made with cookie butter and biscoff crumbs in the batter, swirled with cookie butter globs and topped with biscoff cookies.

STEP 1: For the brown butter, heat cubed butter in a medium saucepan. Stir as it begins to bubble and foam until the butter has browned.

STEP 2: Pour the butter in a bowl with the cookie butter. Add light brown sugar and whisk. Add eggs and vanilla and whisk until smooth and pale.

STEP 3: Fold in the flour, baking powder, salt and ground Biscoff cookies until fully combined. Spread half the batter into an 8x8” prepared pan.

STEP 4: Add globs of cookie butter and spread remaining batter over. Press the cookies on top. Bake for 40 min at 325F. Remove and cool before eating.
