STEP 1:
For the brown butter, heat cubed butter in a medium saucepan. Stir as it begins to bubble and foam until the butter has browned.

Pour the butter in a bowl with the cookie butter. Add light brown sugar and whisk. Add eggs and vanilla and whisk until smooth and pale.

STEP 3:
Fold in the flour, baking powder, salt and ground Biscoff cookies until fully combined. Spread half the batter into an 8x8” prepared pan.

Add globs of cookie butter and spread remaining batter over. Press the cookies on top. Bake for 40 min at 325F. Remove and cool before eating.
