STEP 1:
In a large bowl, mash the bananas until they're pureed and there are no more large chunks. Add the sugar and whisk together until well combined.
STEP 2:
Add the oil and whisk until it's all well combined. Add in one egg and whisk until well combined. Repeat with the next two eggs, one at a time.
STEP 5:
Sprinkle tops with sugar. Bake at 425F for 5 min then reduce the temp to 375F and bake for 10 min, until golden brown and muffins spring back when pressed.
