Fluffy and moist one bowl banana bread muffins with a hint of cinnamon and a sweet crunchy muffin top.

STEP 1: In a large bowl, mash the bananas until they're pureed and there are no more large chunks. Add the sugar and whisk together until well combined.

STEP 2: Add the oil and whisk until it's all well combined. Add in one egg and whisk until well combined. Repeat with the next two eggs, one at a time.

STEP 3: Add in Greek Yogurt and vanilla extract and whisk until it’s completely smooth. Add in flour, baking powder, baking soda, salt and cinnamon.

STEP 4: Whisk until the last streak of flour is incorporated. Cover and allow to rest at room temp for 1 hr. After, fill the muffins tins to the top.

STEP 5: Sprinkle tops with sugar. Bake at 425F for 5 min then reduce the temp to 375F and bake for 10 min, until golden brown and muffins spring back when pressed.

STEP 6: Remove from the oven and allow to cool for at least 10-20 minutes before serving.
