Apple Pie cheesecake bars have a toasted pecan crust, graham cracker crust with a cheesecake filling & topped with caramelized apples, pecans & extra caramel!

STEP 1: For crust, blend graham crackers into crumbs. Add pecans & blend until no more large chunks. Mix in melted butter.

STEP 2: Press the crust onto the bottom of a prepared 8x8 inch square pan and bake for 10 minutes.

STEP 3: Beat cream cheese until smooth. Add in eggs & beat. Add in sweetened condensed milk & beat. Mix in sour cream, caramel & salt until fully combined.

STEP 4: Pour cheesecake over crust & bake at 325F for 40 min. Remove from oven & allow it to cool to room temp, refrigerate, then slice.

STEP 5: For topping, peel & chop apples. Place all ingredients, besides pecans, on the stove & cook until apples are tender.

STEP 6: Remove from heat & allow to cool. Add in pecans & top cheesecake bars with apple mixture & a drizzle of caramel.
